Always curious and passionate about food from a young age, It was an organic path for Nicole to pursue a career in the culinary industry. Born and raised in the Greater Toronto area and given a chance to start out in fast paced kitchens after graduating high school, a spark for the rush of working in a busy kitchen set fire. After several years of working in many different industry sectors and relocating to the lower mainland in BC, Nicole knew the next step was to refine her skills by attending the culinary arts program at VCC in Vancouver. Immediately after completing her training at VCC, Nicole began working at Diva at the Met in Vancouver. Taking in all the incredible gastronomical techniques being used, Nicole knew her best work would be achieved by incorporating innovative, fine dining applications highlighting local ingredients and purveyors.
Salty Fig Catering Co. came to fruition in 2015. Living in the Shuswap, Nicole found a niche market for private catering services to local residents and rural wedding venues. After straddling the corporate chef industry and the passion for creative autonomy, Nicole pursued building Salty Fig into a full time catering company in 2018 and has not looked back since. One of Nicole's greatest strengths is the ability to adapt and grow when faced with adversity. Covid restrictions posed many issues to those in the hospitality industry in a time of uncertainty, Salty Fig was able to grow and excel with flexibility and the desire to provide exceptional service.
At Salty Fig, we are not afraid to make bold choices, push boundaries and take chances combining classic dishes with formidable flavour profiles and techniques.
Not only is Nicole a Chef, she is a Mom to two incredible sons- Tyson and Griffin. They are her inspiration to pursue her passion and take on new challenges, with the hope that they will find their own passion, living authentically in their own journey.
